Karaage-Style west African Fried Chicken

Karaage (pronounced KA-ra-AH-gay) is the Japanese name for fried chicken, another one of those delightful foods that almost every culture enjoys but Lisa’s home country does particularly well. The tricks to getting this recipe right are (1) using the Japanese method of thinly coating the chicken with potato starch instead of flour, which makes for a crispier fry, and (2) peanut oil, which both Africans and the Japanese have long used to get that flaky-light texture that keeps you going back for just one more piece. (If you’re allergic to peanuts, try another light vegetable oil, like sunflower oil.) I also add mustard to the marinade to give it a slightly tangy twist and serve it with moyo sauce.
